Ruz Bukhari (Arabic Dish)

Ingredients required:

  • ½ kg rice
  • ½ kg meat
  • 1 cup tomato paste
  • 1 onion
  • 2 teaspoons salt
  • 1 cup oil
  • 1 teaspoon white cumin
  • 10 pods green cardamom
  • 12 pods black pepper
  • 1 piece cinnamon
  • 1 cup Kabuli chickpeas, boiled
  • 1 cup carrot, grated
  • 2 leaves bay leaf

Direction to prepare:

Step 1:

In a pan, brown the onions then remove from oil and crush. Add meat in same oil and fry until changes the color. Add the tomato paste and crushed onions.

Step 2:

Grind the white cumin, green cardamom, black pepper, cinnamon and wrap them up in cloth to make a spice bag. Add the spice bag and 6 cups of water in the pan.

Step 3:

Now add the bay leaves and cook until the meat is tender and 1 glass stock left. Then add the grated carrot.

Step 4:

Add rice and kabuli chickpeas. Allow to cook for 5 minutes. Keep on steam for 30 minutes. Your dish is ready and serve hot.
